  1. Peel and dice the potato into small, even cubes and roughly chop the cabbage and carrot.
  2. Bring a pot of salted water to boil. Cook the potato cubes until tender, approximately 10-15 minutes. Drain and set aside.
  3. While the potato is cooking, grate the carrot and finely chop the onion.
  4. Heat the olive oil in a non-stick frying pan over medium heat. Add the onion and grated carrot, cooking until softened, about 5 minutes.
  5. Add the chopped cabbage to the frying pan, cooking for another 5 minutes or until softened.
  6. Add the cooked potato to the pan, mashing slightly with a spoon and mixing to combine with the other vegetables. Season with salt and black pepper.
  7. Flatten the mixture in the pan and increase the heat to medium-high, allowing it to cook undisturbed for about 5 minutes until the bottom is crispy.
  8. Flip the mixture in sections, or transfer to a plate and flip the whole thing back into the pan to crisp the other side for an additional 5 minutes.
  9. Meanwhile, heat another small pan over medium-high heat and fry the egg to your preference (runny or fully cooked).
  10. Serve the bubble and squeak with the fried egg on top and garnish with freshly chopped parsley.
