Chicken Spaghetti All'assassina
A fiery twist on the traditional dish, combining the classic burnt, crispy spaghetti technique with tender chicken. The pasta is intentionally "assassinated" by aggressive heat and minimal liquid, creating a uniquely charred, caramelized texture while maintaining a spicy, intense tomato flavour.

Method
0 of 9 done- Boil some water in a pan. (300ml for every 80g of spaghetti)
- Season the sliced chicken with salt and pepper. In a large, heavy-bottomed pan, heat a small bit of olive oil and cook the chicken until golden. Remove and set aside.
- In the same pan, heat the remaining oil until very hot. Add minced garlic and chilli flakes, sautéing briefly.
- Add dry spaghetti to the pan, spreading it evenly. Pour half the passata over the pasta and let it start to caramelize - don't stir yet!
- Once the tomato sauce starts to stick and char (about 2-3 minutes), add a small ladle of boiling water and the remaining passata and tomato puree.
- Now begins the "assassination": Let the pasta cook at high heat, adding small amounts of boiling water only when needed. The goal is to create a crusty, charred bottom layer.
- After about 15 minutes, when the pasta is almost cooked and developing a nice char, return the chicken to the pan.
- Continue cooking until the pasta is al dente and has a good mixture of crispy and tender parts. The bottom should be well charred.
- Finish with oregano, parmesan and additional chilli flakes if desired.
