  1. Begin by preheating your oven to 200°C (180°C fan). Line a baking tray with parchment paper.
  2. Wilt the spinach in a dry pan over medium heat until just collapsed. Remove from heat, let cool, then squeeze out as much liquid as possible and chop finely.
  3. In a bowl, mix the chopped spinach with crumbled feta, garlic powder, salt, and pepper. Pat the diced tomatoes with kitchen paper to remove excess moisture.
  4. Unroll your puff pastry sheet onto a lightly floured surface, keeping it on its paper. Spread the spinach and feta mixture evenly over the pastry, leaving a 2cm border at one long edge. Scatter the drained tomatoes over the spinach mixture.
  5. Starting from the long edge without the border, tightly roll up the pastry like a Swiss roll, using the paper to help you. Seal the edge with a little beaten egg. Wrap in cling film and chill for 15 minutes to firm up.
  6. Cut the roll into 2cm-thick slices using a sharp knife. Place the pinwheels on your prepared baking tray, leaving space between each for expansion. Brush with beaten egg.
  7. Bake for 15-20 minutes until puffed up and golden brown. Best served warm, though they're also delicious at room temperature.
