  1. Cut the paneer into bite-sized cubes. In a bowl, mix the yogurt, lemon juice, garlic, ginger, cumin, coriander, garam masala, turmeric, chilli powder, salt and pepper. Add the paneer and turn gently so it is well coated. Leave it to marinate while you start the sauce, or for up to 20 minutes if you have time.
  2. Heat the Olive Oil in a frying pan over a medium heat. Add the onion and cook for 5 minutes, stirring now and then, until soft and starting to colour.
  3. Stir in the tomato purée and cook for 1 minute. Add the chopped tomatoes and water, then simmer for 5 minutes until the sauce has reduced slightly and looks less sharp.
  4. Add the marinated paneer and any remaining marinade to the pan. Stir carefully so the cubes stay intact, then cook for 4 to 5 minutes until the paneer is hot through and the sauce is lightly thickened.
  5. Pour in the double cream and add the sugar. Stir through and cook for 1 more minute. Taste and adjust with a little more salt if needed. Finish with the chopped coriander and serve straight away with naan or rice.
