Method

  1. Halve the garlic clove lengthwise.
  2. Sprinkle the salt over the courgette strips and let them sit for 30 minutes.
  3. Cut the courgette in half crosswise, then slice each half lengthwise into pieces about 3 mm wide. Stack these slices and cut them lengthwise into strips of the same width. Put the strips in a large sieve over a bowl, sprinkle with salt, and let them sit for 30 minutes. After draining, squeeze handfuls of courgette to remove excess water, then wrap them in several layers of paper towel and press to extract any remaining moisture.
  4. Heat the oil in a heavy frying pan (18-20 cm diameter) over medium-high heat. Add the garlic halves and cook, turning occasionally, until golden, about 1 to 2 minutes. Remove and discard the garlic.
  5. While the garlic cooks, toss the courgette strips with the flour in a bowl. Once the garlic is removed, add the coated strips to the hot oil and fry, turning occasionally with a slotted spoon, until golden, about 5 to 6 minutes. Transfer to paper towels to drain. Serve immediately.
