  1. Heat the olive oil in a large frying pan (or paella pan) over medium heat.
  2. Dice the chicken thigh into bite-sized pieces and add to the pan, cooking until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
  3. Finely chop the onion and garlic. Dice the red bell pepper and tomato.
  4. In the same pan, add the chopped onion and garlic. Cook until translucent and fragrant, about 3-4 minutes.
  5. Add the diced red bell pepper and tomato to the pan, cooking for another 5 minutes until softened.
  6. Stir in the paella rice and cook for 2 minutes, allowing the rice to toast lightly.
  7. Pour in the chicken stock and add the paprika, saffron threads (if using), salt, and black pepper. Stir well to combine.
  8. Return the chicken pieces to the pan and bring the mixture to a boil. Reduce the heat to low and let it simmer, uncovered, for about 15 minutes.
  9. Add the prawns and frozen peas to the rice mixture. Stir to combine evenly. Continue to cook for another 5-10 minutes, or until the rice is tender and the prawns are cooked through.
  10. Once the paella is cooked, remove from heat and cover with a clean kitchen towel. Let it sit for a few minutes to absorb any remaining liquid.
  11. Serve the paella on a plate with a lemon wedge on the side to squeeze over before eating.
