Poached Eggs with Smoked Salmon and Bubble & Squeak

A breakfast plate of poached eggs on smoked salmon with a small serving of bubble and squeak. The cabbage adds texture to the potato hash, while the salmon keeps the dish lighter than the usual bacon version.

  1. Put the diced potatoes in a small pan, cover with cold salted water and bring to the boil. Cook for 8 to 10 minutes until just tender, then drain well.
  2. While the potatoes cook, place a shallow pan over a medium heat. Add the Olive Oil and butter, then stir in the cabbage with a pinch of salt. Cook for 3 to 4 minutes until softened but still slightly crisp.
  3. Add the drained potatoes to the pan and press them down lightly with a spoon so they begin to break up. Cook for 4 to 5 minutes, turning once or twice, until the edges are lightly browned and the mixture looks like rough hash. Season with black pepper.
  4. Meanwhile, fill a small pan with water. Bring it to a gentle simmer. Crack the eggs into two small cups, then slide each one into the water and poach for 3 minutes for a soft yolk, or a little longer if you prefer it firmer.
  5. Lift the eggs out with a slotted spoon and drain briefly on kitchen paper. Warm the smoked salmon for a few seconds only, if needed, so it does not lose its texture.
  6. Serve the bubble and squeak on a plate, top with the smoked salmon, then add the poached eggs. Finish with a little salt and black pepper, and serve straight away.
