  1. Preheat your oven to 200°C (180°C fan) / 400°F / gas mark 6.
  2. Wash the sweet potato thoroughly, then slice it in half lengthwise. Rub the flesh with a little olive oil and place the halves flesh side down on a baking tray. Roast in the oven for 30 minutes until the sweet potato is tender and the edges are caramelised.
  3. While the sweet potato is roasting, peel and thinly slice the red onion.
  4. In a frying pan over medium heat, add 1 tablespoon of olive oil and sauté the red onion slices for 5-7 minutes until softened and lightly caramelised. Set aside.
  5. Use the same pan to cook the minced beef over medium-high heat, breaking it apart with a wooden spoon. Cook for around 5 minutes until browned all over.
  6. Add the chilli powder, paprika, Italian herbs, salt, and pepper to the beef, and stir well to combine. Crush in the garlic clove, add chopped spinach and cook for 2 minutes, allowing the spices to release their aroma.
  7. Remove the sweet potato from the oven. Carefully scoop out a small portion of the sweet potato flesh to create a cavity for the beef mixture, setting the scooped flesh aside for another use if desired.
  8. Fill the sweet potato cavities with the seasoned beef mixture, piling it generously. Top with the caramelised red onions, and return to the oven for another 5 minutes to heat through.
  9. Serve hot, garnished with any desired fresh herbs or a sprinkle of additional chilli powder for an extra kick.
