- Heat a little oil in a frying pan over a high flame. Tip in the lamb mince and break it up with a wooden spoon. Cook until browned, then pour off any extra fat if you wish.
- Put the browned meat into the slow cooker. Add the chopped onion, crushed garlic, dried oregano, ground cinnamon, bay leaves, passata and a splash of water. Season with salt, pepper and sugar.
- Turn the slow cooker down to Low and let it cook for 2½ to 3 hours.
- Meanwhile, clean the frying pan with a paper towel. Pour in a little more oil and fry the aubergine cubes in batches until they turn golden. Set them aside.
- After the first cooking period, tip in the fried aubergine and the halved new potatoes. Stir everything together. Cook on Low for a further 3 hours, or until the potatoes are soft.
- To make the béchamel, melt the butter in a saucepan over a medium heat. Add the flour and stir constantly for 2 minutes. Gradually whisk in the milk until the mixture is smooth, then bring to a gentle simmer.
- Take the pan off the heat. Stir in the grated Parmesan and season with salt and pepper. Leave to cool for a few minutes, then beat in the free-range egg until fully incorporated.
- Spoon the lamb mixture from the slow cooker into a shallow baking dish. If it seems thick, stir in a splash of water. Pour the béchamel sauce evenly over the top.
- Turn the grill to high. Set the dish underneath and grill until the top is golden brown and bubbling.
