Method
0 of 3 done- Break the eggs into a medium bowl and whisk until the yolks and whites are combined. Add a pinch of salt and a pinch of pepper, then beat well. Spoon out a small amount of the mixture and keep it aside.
- Warm a 25cm nonstick frying pan on medium-low heat for about 2 minutes until hot. Add the oil and tilt the pan with a rubber spatula to spread it evenly, letting it melt and become foamy. Pour in the larger portion of the egg mixture and leave it without stirring until the edges begin to set, roughly 1 to 2 minutes. Using the spatula, draw the set edges towards the centre. Wait about 30 seconds, then repeat this pushing action every 30 seconds until the eggs are just set, taking about 5 minutes in total.
- Stir in the reserved raw egg and continue stirring until the eggs no longer appear wet. Take the pan off the heat, adjust the seasoning with salt and pepper if needed, and serve straight away.
