Method
0 of 6 done- Peel the squash, remove the seeds, and cut the flesh into cubes about 1cm across. Roughly chop the almonds. Trim any tough stalks from the spinach.
- Heat the oven to 230°C.
- Put the squash cubes in a shallow roasting tin, add a little of the oil, and toss to coat evenly. Spread the cubes out in a single layer and season with salt and pepper. Roast in the middle of the oven, turning once halfway, until just tender and lightly browned, about 30 minutes. Leave the tin on a wire rack to cool until the squash is just warm, roughly 15 minutes.
- While the squash roasts, put the remaining oil in a frying pan about 25cm across and add the chopped almonds. Cook over a low to medium heat, stirring constantly, until the almonds are golden, about 3 minutes. Season with salt and pepper. Tip the almonds and oil into a fine sieve set over a large bowl and leave until just warm, about 10 minutes.
- Once the almond oil has cooled slightly, whisk the lemon juice into the oil in the bowl until well combined, then season with salt and pepper. Add the squash, spinach, and half the almonds to the dressing and toss gently to coat everything.
- Divide the salad between plates and scatter the remaining almonds over the top.
